Production Notes:
RED POP is made with hibiscus, foraged blackberries and cranberries. Hibiscus, fruit and capitalization sugar was placed in a stainless steel tank. The tank was flushed with CO2 and sat lidless until signs of fermentation were visible. At that point, the hibiscus was removed, lid was sealed and the tank was flushed with CO2 again. Fermentation continued actively for 22 days, until remaining sugar content was in range for packaging. The remaining fruit was then mechanically separated and the bulk wine was sent to cold storage. Once the wine flavors had softened, Yeast slurry was pulled from the bottom of the wine and introduced to fresh juice. The bulk wine was also pulled from cold storage at this point. Once the bulk wine had reached room temp, the active yeast slurry was added back to the wine. The wine was then packaged. 101 cases produced
This wine received no sulfur additions.
